Master Your Roasting Technique & Other Basics + Wine Pairing


In this 1 hour session I'll show you how to harness the power of your oven and truly make your next roast the star of the meal. Each class will also feature a wine pairing to go with your meal

Choose from some favorites like:
-Whole Roasted Chicken with chicken jus, seasonal roasted or sautéed vegetable side
-Whole Roasted Side of Fish with brown butter caper sauce, sautéed veg and wilted greens
-Pan Seared Steak with roasted beef jus, garlic and herb mashed potatoes

I also have plenty of vegetarian options and other menus for other dietary restrictions, just let me know.

Your Class

We'll begin my talking about the basics of roasting, when to roast, and how to prepare vegetables and proteins for the high dry heat.

Then we'll move into the recipes beginning with main dishes first where we can overview techniques like trussing and arrangement in roasting pans.

After the roast is underway, we'll transition to other dishes and discuss final presentation and how basting can make or break a good roast.

Finally, I'll guide you through finishing the dishes including the best way to rest and carve any proteins. Just before diving in, we'll talk through the wine selected to complement the meal.

Austin is currently the Executive Sous Chef at the newly opened Pilot within The Hoxton hotel in downtown LA. He spent over 10 years in Chicago's fine dining scene, joining the team at restaurants like Acadia (2 Michelin Stars).
